Simple Chicken Curry (Semi-Dry)

Ingredients :
  • 3lbs of skinless boneless chicken thighs, cleaned and cut into small pieces
  • 2 tsp chili powder
  • 2 tsp coriander powder
  • 2 tsp achi masala chicken curry powder
  • 1 tbsp garlic paste
  • 1/4 tsp turmeric powder
  • 1 tbsp ginger paste
  • 3 tbsp gingelly oil
  • salt
Procedure :

1.Heat oil in a deep heavy bottom pan/or you can use a pressure cooker pot without the lid.

2.Be really careful for the next step.Add/dump all the chicken into the hot oil.Make sure to drain the water completely to avoid splattering and do not get yourself hurt during this process.Once the splattering has gone down, stir the chicken around the oil.

3.After a couple of minutes,add garlic paste,ginger paste,chili powder,coriander powder,curry powder and turmeric powder to the chicken.

4.Blend everything and cover the chicken with a lid for 5 minutes.

5.As you can see,the chicken will start letting out water. At this stage, add necessary salt, remove the lid, turn the flame to a medium high, and let the gravy reduce down.

6.After 10 to 15 mins, the gravy would be reduced down, the raw  smell would be gone and the oil starts to separate.

7.In another 5 mins the gravy will be semi dry and glossy.Transfer to a bowl and serve.
