Ingredients :
- 3 cups of cut yellow pumpkin
- 1 red onion,chopped
- 1 cup of tamarind pulp
- 1 tsp chilli powder
- 1 tsp coriander powder
- 1/4 tsp turmeric powder
- mustard seeds,jeera
- oil,salt,jaggery,coriander leaves.
Dry roast separately and wet grind together :
- 1 tbsp peanuts
- 1 tbsp sesame seeds
- 5 red chillies
- 1 tsp coriander seeds
- 1 tsp dry coconut
Procedure :
- Dry roast and grind the ingredients listed above.Add tamarind water,chilli powder,coriander powder,turmeric powder to the ground masala and mix well.
- Heat 4 tbsp of oil in a kadai.Season with mustard seeds,jeera.Add onion and cook it through.
- Pour the mixed gravy into the kadai and let it cook,till the raw smell goes away.
- Since it has peanuts,the gravy will stick to the bottom.So constantly stir the gravy and scrape the bottom if needed.
- Once the gravy is reduced into half and oil starts to come out,add the cut red pumpkin.Cover with a lid and let it cook until its tender.
- Add necessary salt and jaggery and lots of chopped fresh cilantro(coriander leaves).Stir well and its ready to be served.
Trivia :
- Since it has tamarind,salt, and jaggery ,the gravy will be sweet,sour and salty.
- Add necessary amount of water in between to get to the required consistency for the gravy.
- Goes well with chapathis or a side dish of lemon rice or puliyogare.
