Chenna Masala - Quick,Simple and Easy

Poori and  Chenna Masala


Ingredients :
  • 2  cardomom
  • 2  cloves
  • 2" cinnamon
  • 1  small kalpasi (black stone flower/pathar ka phool)
  • 1/2 tsp fennel seeds
  • 2  medium sized big onions
  • 2  large tomatoes
  • 1 cup  chickpeas,soaked for 6 to 8 hrs
  • 1  tsp  ginger garlic paste
  • 1 tsp chilli powder
  • 1 tsp kitchen king masala powder(kinda like garam masala)
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • salt,oil,coriander leaves.
Procedure :
  1. Heat oil in a pressure cooker.Add cinnamon,clove,cardamom,kalpasi and fennel seed and let the flavors come through.
  2. Then add chopped onions to the oil and cook until the raw smell of the onion is gone.
  3. Now add chopped tomatoes,add little bit of salt and cook until the tomatoes are soft.
  4. Then add ginger garlic paste,chilli powder,coriander powder,turmeric powder,kitchen king powder.Cook till the raw smell goes and gets a nice gravy consistency.
  5. Now add the soaked chickpeas, then add 3 cups of water, stir a little, close the lid and let it cook for about 20 minutes (about 3 to 4 whistle sounds).If you are feeding little kids,cook the chenna little more softer to avoid choking, say for about 30 mins.
  6. When the pressure is off,open the lid,add needed salt and stir the whole thing together and keep it in a slow boil for 5 mins.
  7. Finally add chopped coriander leaves and serve.

  1. another suggestion..grind (onions,tomatoes,4 or 5 chickpeas) n then add it to the gravy to thicken the paste.also add cumin seeds while seasoning.

    1. I dont like adding ground onion,mostly because its very hard to get the bitter and raw onion smell out.you'll need to add lots of oil too..Other than that,I totally agree with the rest you've said.
