Cauliflower Podimas a.k.a Cauliflower Curry






Ingredients :

  • 1 whole medium sized cauliflower,chopped 
  • 1 medium sized big onion
  • 1 small tomato
  • 3 garlic pods,crushed
  • 1 to 2 tsp chilli powder
  • 1 1/2 tsp coriander powder
  • 1/2 tsp fennel powder
  • 1 tsp kitchen king masala powder
  • pinch of turmeric powder
  • 1" cinnamon
  • 1/2 tsp fennel seeds
  • salt,oil,coriander leaves



Procedure :
  • Cut the cauliflower and put it in a pot of boiling water.Leave it for 10 mins and then drain the water.
  • In the meantime,heat 3 to 5 tbsp of oil in a large pan or kadai with a heavy bottom.I used pressure cooker pan.
  • Once the oil is hot,add cinnamon and fennel seeds first,once the fennel seeds start changing color,add onions and garlic and cook until the onions are change color and becomes soft.
  • Now add  chopped tomatoes and cook them until they are soft.
  • Now add all the spice powders listed above,and cook the gravy until the raw smell goes and oil separates.
  • Then add the half cooked cauliflower and mix into the gravy.Let the gravy coat the cauliflower.
  • After about 5 to 7 mins,the florets will be completely cooked.
  • Now bring the heat to up,to a high flame and stir the cauliflower rapidly across the pan.Scrape of the bits that gets stuck to the bottom and keep on stirring,you'll notice the cauliflower had completely blend and gets a semi-gravy consistency,as shown in the picture.
  • Add chopped coriander leaves and serve.
Trivia :
You do need 3 to 5 tbsp of oil,given the quantity of cauliflower you are cooking and number of people you're serving.
