Aviyal,Cauliflower podimas,Pepper Rasam


Ingredients :

  • 2 small carrots,chopped lengthwise
  • 10 to 15 strings of beans,slit and chopped lengthwise
  • less than 1/2lb white pumpkin,chopped lengthwise
  • 10 to 15 small cubes of cut suran (yam)
  • 1/4 cup yogurt
  • oil,salt,curry leaves,mustard seeds and jeera for seasoning
To grind and make a paste :
  • 1/4 cup coconut
  • 5 green chillies
  • 1 tsp jeera
   Add little bit of water and grind into a fine paste.



Procedure :
  1. Add all the cut veggies into a kadai, close the lid and let it cook for 10 mins.
  2. By the time the veggies are cooked through,add a pinch of turmeric powder and the ground masala and stir it in.Let it boil for 5 mins.
  3. Now pulse the yogurt in a blender and mix in.Add necessary amount of salt.
  4. In a seasoning pan,heat a little bit of oil.Once the oil is hot,add mustard seeds,jeera and curry leaves and let it splutter.
  5. Once the aviyal is seasoned,its ready to be served.
Trivia :
You can also add eggplant,clustered beans,drumstick,green plaintain and bottlegourd.
Cook the pumpkin separately to avoid it from getting mushy and overcooked.
The yogurt should be sour,but not too sour.
If you use coconut oil for seasoning,the aviyal will be so flavorful,and is the most authentic way of making it.
