Shrimp Gravy

Ingredients :
  1. shrimp                    - 2 lbs (almost 1 kg)
  2. big onion                - 1
  3. tomatoes                - 2
  4. g.chillies                - 3
  5. chilli powder           - 2 tsp
  6. turmeric powder      - 1/4 tsp
  7. coriander powder     - 1 tsp
  8. fenugreek powder    - 1/4 tsp (venthaya podi)
Make a paste from :
  1. garlic  -  8 pods
  2. ginger - 8 cubes,cut
  3. almonds  -  1 tbsp (peeled and slivered)
Procedure :
  1. Clean the shrimp thoroughly.Double check for veins.Add turmeric powder and keep it aside.
  2. Heat 3 tbsp gingelly oil in a kadai and temper with peppercorns, fennel seeds and curry leaves.
  3. Add finely chopped onions and green chillies.Cook till the onions get soft.Add a pinch of salt.
  4. Now add the tomatoes and cook it through.
  5. Then add all the spice powders listed,ground masala and stir everything together.Cook till it gets to a gravy consistency and the oil separates.
  6. Now add the cleaned shrimp, cover it with a lid and cook for 10 mins.Now the shrimp will let out water.Then remove the lid and let the shrimp cook till the gravy start to thicken (about 10 mins).Turn off the stove depending upon ,how much gravy you want in it.
  7. Finish it off with chopped coriander leaves.
  8. Note: If there is too much water, drain some, into a separate pan and let the gravy reduce down.Depending upon your consistency , add the reduced gravy to the shrimp and let it all blend together well.Keep the flame at high and stir the whole thing together for 5 mins.Make sure it doesnt get burnt.
